I was able to make a connector using the Fivetran AI agent and it did pull some useful tables. However, their API requires sending each phone number individually to get the call transcript. I was advised in a support ticket (#421141) that this is something that could be done using the numbers in the CONVERSATION table:

"The current connector does not automatically discover participant numbers. As a result, the existing design requires the customer to manually maintain the Participants field, which is not practical for their use case because they have hundreds of changing external numbers.
 
Engineering confirmed that supporting automatic discovery of participants from CONVERSATION, followed by fetching CALL and transcript data, requires a connector enhancement."
