Additional details:

When an order is captured in offline mode, whether due to internet issues at the device, or server issues on Square's side, the order.created_at field represents when Square receives that order, NOT when the device captures the order at location. Once connectivity is restored, all offline orders are sent as a batch to Square's server, and the order.created_at timestmap will be identical for all orders in that batch, even if those orders were created hours or days prior.

Previously you could use tender.created_at to identify the true timestamp for an order captured in offline mode, but due to a change in the behavior on Square's side, the only way to identify when an order is actually captured locally is through payment.offline_payment_details.client_created_at. payment.offline_payment_details.client_created_at.
