Make replay frequency and lookback window configurable

Expose replay sync frequency and lookback window as connector-level settings
Additional details:
Replay frequency and lookback window are currently fixed per strategy and cannot be adjusted:
- Weekly strategy: 15,552,000 seconds (180 days)
- Daily strategy: 86,400 seconds (1 day)
Neither matches our source's actual behaviour. Our measured recovery tail is at least 3–4 days and probably longer. A daily replay with a 7-day lookback (604,800 seconds) would cover it comfortably, but that combination isn't available.
This is not a request for a new mechanism, the replay already moves a cursor back by a configured number of seconds, as visible in the connector log (Moving cursor back by 15552000 seconds). We are asking for that value, and the run frequency, to be exposed as settings.
Requested behaviour
Two connector settings:
- Replay frequency: how often a replay runs (e.g. hourly, daily, weekly)
- Replay lookback window : how far back the cursor is moved, in seconds or days
