We'd like to be able to write to an Iceberg table located on a Snowflake external volume.

Thanks for the request.
Our Iceberg support is delivered through the Fivetran Managed Data Lake Service (MDLS). MDLS writes Iceberg tables to your own object storage (S3/GCS/Azure) and registers them in a catalog, so Snowflake and other engines can query the same tables.
