Gong connector: add configurable historical window for periodic table re-imports

The Gong connector performs weekly full re-imports for certain tables (CALL, ANSWERED_SCORECARD, MANUAL_CALL) to capture updates and deletes. Currently, these re-imports pull the complete history regardless of data volume. For organizations with large Gong datasets, this creates a recurring issue: each weekly re-import cycle pulls ~100M+ rows, which consistently exhausts Gong's 10,000 requests/day API limit and causes multi-day sync outages.
Request: Add an option to limit the historical window for re-imports — e.g., re-import only the last 30/60/90 days — so that as data volumes grow, the re-import footprint stays bounded rather than expanding indefinitely.
Business impact: Without this control, weekly sync outages are inevitable and will worsen over time as our Gong data grows. We observed recurring outage cycles— each caused by the re-import cycle exceeding the Gong API rate limit (10,000 req/day). Reference: Fivetran Support Ticket #374841.
