Thanks for the feature request! Worth noting that Fivetran does log some schema-related activity today — events like change_schema_config, alter_table, create_table, and drop_table are all available via the free Fivetran Platform Connector (automatically added to every destination), so you can query those to piece together a change history. That said, there's no single out-of-the-box export for this, so I understand the ask. We'll keep this open to track interest.
