Connector Improvement: Allow overriding of column names in the schema

When files are provided from a third party and share over a number of users it is not always possible to have the headers corrected to play nicely with FiveTran rules.
While the Source Naming selection is an option it can be that we only want 1 column to be overridden due to it being automatically transformed into a reserved word.
In my case CurrentDate was converted to "current_date" which is an inbuilt function name. Novice users of this column may end up with data they were not expecting in this case.
It would be nice if we could have to rename columns (and types) when setting up the definition.
