Currently, it is only possible to trigger a Coalesce transformation of a single Coalesce project or environment per Fivetran Destination. It would be great if it were possible to choose more than 1 Coalesce job in a transformation or to be able to have multiple transformations to trigger different Coalesce jobs even if they have the same Fivetran Destination.
