This is a good idea that we have been considering as a way to capture a full history of event changes by consume events from Salesforce Change Data Capture. The request is on our feature improvements backlog.
There are some trade offs we have to make while designing the feature, to help us with this can you share more about your use case and the specific object event history you are currently missing and would hope to capture with this?

@Alison - I don't have a specific use case in mind, but effectively what we are trying to do is understand the lineage of updates that are made to records in Salesforce across all fields. The closest parallel would be if field history tracking were enabled for all fields on all objects (which is not possible in Salesforce). Extending this to record history itself (e.g. being able to catalog when a record is created, deleted, by whom), although I think we do get a fair amount of that detail from Fivetran / Snowflake already.
An example would be that we want to see if a user updated a field vs an integration, and may want to treat that differently within Snowflake. Happy to chat further if you'd like to get into details.
