Connector Improvement: Shopify: Allow fewer access scopes

When creating a Shopify connector for a non-Fivetran app, Fivetran currently requires a wide array of access scopes. Some of these scopes allow access to sensitive data and PII. The scopes are listed in the docs.

My request is to allow users to provide only the access scopes for the tables we know we want to ingest. For example, do no require `read_customers` if the connector is not intended to ingest `customer` tables.

This would reduce the risk of connecting a Shopify account by limiting the access scopes needed.

    The idea to allow selecting only the required Shopify access scopes is valuable. Apologies for not updating the portal on this topic previously. The request has been added to our feature improvements backlog.
