Connector Improvement: Add demographic fields to HiBob schema (ethnicity and sex)

Add fields for ethnicity and legalSex to the schema for the HiBob connector. 

We need these data points in order to measure diversity. The gender field which is already in the schema is an optional field in HiBob, meaning it doesn't contain complete data. For this reason, the additional field of legalSex is necessary.
