Connector Improvement: Add Statistics to Gorgias Data loader

Currently the Statistic object isn't apart of the Fivetran data sync using their connector (outlined in their docs here)

I believe this may be a new endpoint but it's very crucial data as it's aggregated statistics generated by Gorgias team. Super helpful to have internally on our team as the metrics are accurate and we can see performance of our users.
