Connector Improvement: GitHub: Projects (version 2) support

We are looking to analyze data around the current (version 2) implementation of Projects.
The Classic Projects that the Connector launched support for in 2019 are no longer available via the web, though apparently they are, for now, available via the REST API.
I am given to understand the new implementation of Projects is only available via GraphQL and not via REST, so this may not be an easy improvement.
