Connector Improvement: Upgrade MNTN to R2 API 3.0

The MNTN connector is currently using the R2 API and needs to be upgraded to the 3.0 version of the API. The R2 API is missing conversion data. From a recent conversation with Fivetran support:
I dug deeper into the issue and noticed that you are using R2 API 3.0 (api3.mountain.com), while we are using the R2 API (api.mountain.com), which is not returning the correct results.
It seems that the newer version 3.0 is now supported by MNTN, but this was not the case when we originally developed our connector.
When we used the api.mountain.com(R2 API) endpoint, we were unable to retrieve the data mentioned in my previous email.
