Connector Improvement: Stripe: lookback period for initial sync / historical re-sync

I recently had to perform a historical re-sync of the Fivetran connector for Stripe, which took a very long time to complete.
During the sync, the connector was sending API requests with date filters that were set too far in the past (way beyond the time when our Stripe account was created), resulting in empty responses from the Stripe API.
I believe the Fivetran connector for Stripe would benefit from a setting like "start_sync_from" that would allow users to limit the lookback period for initial syncs and historical re-syncs, making the process more efficient.

Thank you for submitting this request. We consider requests for configuration like this very carefully because they can come at the cost of added code complexity. Limiting data also has the potential to create referential integrity issues for customers. That being said, we are monitoring demand and evaluating feasibility.
