Gainsight Customer Success connector currently doesn't capture deletes from Gainsight.
This is one of the crucial functionality of gainsight and should be a part of Gainsight connector as for business it is important to know which issues are no longer available and deleted.

Hi all,
This feature is now available. Note that the endpoints we are using do not return deletes for System Objects. According to Gainsight, data from System Objects cannot be deleted. If you have a case where you are deleting from System Objects, please reach out to Support referencing my message here and ask to be put in touch with me so we can further investigate.

Sadie from the Product team here. Thanks for raising this request. We haven't seen much demand for this feature, but we understand the value to our customers and have it in our backlog. I don't have a timeline yet. In order to help with planning and prioritization, could you share which tables you need Fivetran to capture deletes?

We also need this functionality for reporting purposes. It would be great if you could implement this. Is there any ETA for this request?
