Transformations: Update Fivetran Log Quickstart models to use FIVETRAN_PLATFORM...

The quickstart models for the fivetran log database are still using the legacy FIVETRAN_LOG prefix for the models, rather than FIVETRAN_PLATFORM.

These should be updated to generate FIVETRAN_PLATFORM tables and views.

    Appreciate your patience here– this was fixed a few weeks ago in Quickstart. Let me know if you see any issues upgrading via Transformations Settings.

    Thanks, @Anna.  I had written a workaround, but will take a look at the transformations.
