Connector Improvement: Incident.IO Connector Improvement

Several feature request for the Incident.io connectord:

  1. Support loading in Catalog type and entries associated https://api-docs.incident.io/tag/Catalog-V2
  2. Support the custom fields that reference the catalog entry 
  3. Support loading in the value from custom field types of "text". Currently, these values are just dropped.
