Connector Improvement: Stripe connector: support pulling reporting_category field from Stripe's balance_transaction

I'd like to request to add the ability to have the reporting_category field from Stripe's balance_transaction object extracted (https://stripe.com/docs/api/balance_transactions/object). Currently, I see this is not supported yet. Thanks.

    Thanks for submitting this feature request! I think adding this field makes a lot of sense and there have been other requests for this field. I will add this to our backlog and prioritize this for a future sprint.

    Hello Giovanni — I thought I'd share this document from Stripe, in case you haven't seen it. I'm using the mappings from `type` to `reporting_category` that they outline therein to do, in code, what having the connector updated would provide.
