Airtable is very usefull for maintaining masterdata to be baked into DBT models for analysis. More robust than say a google sheet. For that reason I think you should do a connector that replicates Airtable to DW.

One issue you might find is the elasticity of the Schema because users can add/remove stuff too easily. I would recommend simply a "mirror" model option where if the user drops a column, you would drop the column too. Alternativelly, whatever strategy you use for google sheets.
