Other: Fivetran Connectors API Retrieved Connector Schema should always include columns

We require two things
1. columns included in tables schema retrieved from the connectors end-point

2. the get request to retrieve schema should allow a parameter to limit only to enabled tables
Context: We are building advanced uses around our fivetran ingestion like incorporating syncs in Airflow DAGs and such. But to operate that, we need a consistent view of the data model/schema the connector is using. For that we capture and store schema configs.
