Thanks for this request and for sending over the API docs. Currently, we use Shopify's REST API for the Product table and are unable to sync the 'product_category' field. Can you please elaborate on your use case with the 'product_category' field?
It looks like a similar field, 'product_type', is being synced - is this field sufficient?

Thanks for the reply Calvin. We want to use both the product category and the type. In our case a category would be something like 'hair care' or 'skin care' where as the type would be things like 'shampoo', 'conditioner', 'serum' or 'night cream'.
Basically a two tier categorisation is only possible with two fields. Of course, we can do this outside of Shopify by storing these values in a custom table in the data warehouse but it's clunkier because a user creating a product has to go to two places to add the information.

As an additional update - we are looking to provide support the Shopify's GraphQL API for the Product endpoint in the coming quarter. Once we add this functionality, I'll be sure to include 'product_category' as an additional field.
I'll update here once I have a more concrete timeline to share. -
