Why is the connector automatically selecting and syncing certain tables?

Answer

If you have checked the option Include new schema and tables by defaulton your connector dashboard, the connector will automatically select and sync any newly-detected tables.

You can uncheck this box on your connector dashboard to avoid syncing all of these automatically and can choose to sync them at any point by manually selecting those tables from the Schema tab.
