I deleted a column in my source database but I can still see it in the destination table.

Deleted columns are left untouched in your destination, containing whatever data they had at the previous update, and nulls from this update forward. You can find this information in the Schema migration section of our documentation.
Let a table in your source, T, contain the columns A, B, C, D. You sync the full table, and after, delete column D from the source. When Fivetran writes to a destination, it specifies the columns into which it is writing. If the source has columns A, B, C, and the destination has columns A, B, C, D, Fivetran will write these values to columns A, B, and C. There is no action specified in column D, and therefore we will not track changes on column D, nor will we specify writes on that column from the moment it was deleted onwards.
